Cheese, green tea, connections

I went to the Pike Place Market cheese event today and tried to jockey for position to taste samples from various unfamiliar dairies, and a couple of familiar ones.

A woman with very good pitching skills from Ritrovo introduced a truffle salt, which I thought was quite nice; hydrated in some olive oil, the taste was at least as nice as a decent truffle-infused olive oil. They sampled the salt dressing some cheese curds and olive oil. I was sold… tonight’s dinner included some blanched broccoli with olive oil and this very salt. Very simple, very earthy.

I also acquired some fennel-studded soft aged chevre cheese from Rollingstone Chevre in Parma, Idaho, and some “Camellia” fleur de Chevre from Redwood Hill Farm of Sonoma County, California. I had a bit of buffalo mozzarella acquired recently at PFI, so that was the mild end of the spectrum. Accompanied with a very nice fig jam and some quince paste. We had a bit of a Chateau Ste. Michelle Canoe Ridge Estate Merlot, which was moderately complex and nice, a gift from Kaori’s boyfriend.

I think my only regret was not picking up a supply of the Rollingstone brandy-aged chevre or any blues, but I don’t want to go completely broke.

I chatted a bit with Ilyse of Ritrovo and exchanged cards. She spent a few years in Japan and said some of her customers have been requesting yuzu, so perhaps there’s some potential mutual assistance in the future.

I did have a demo scheduled today, but I didn’t get started until almost 2pm. I needed a bit of lunch so I stopped for a quick bite on the way. I was kind of feeling frustrated by the idea of encountering more slow traffic at the Bellevue Uwajimaya store, so I didn’t really feel like rushing over. But actually Bellevue Uwajimaya was busier than the most recent Sunday demos I’ve done there, perhaps due to dreary drizzly weather. Sales weren’t bad at all; the matcha latte in particular moved fairly fast. Beaverton yesterday, by contrast, was incredibly quiet, due perhaps to relatively pleasant weather and a new nearby supermarket’s grand opening.

Friday afternoon I did a little afternoon demo at Seattle Uwajimaya, where the traffic was fairly light as well. Apparently I ended up at the least busy stores on Friday and Saturday, alas… It’s hard to predict.

My new shipment of dragon beard candy probably departed on Sunday but the shipper probably messed up FDA prior notice, so I guess it will be delayed as it was last time.

Transforming ingredients, again

I’m afraid, after a late night updating my online store, my body was not in great form today… I got through most of the daytime hours, but I couldn’t even convince myself to go jogging this evening. Fortunately, I instead eventually worked up the energy for a brief walk around Greenlake.

By the time I was making dinner tonight, I was too sleepy to take a photograph, and yesterday I was perhaps too distracted, but my feta/cucumber/tomato sandwich type lunch was revisited in the form of a salad… some romaine, a lemon-mustard-vinaigrette, parmesan, feta, olives, cucumbers, tomato. I buttered some thin slices of yesterday’s seeded baguette, and grilled them on my nifty All-Clad grill pan, and wiped a bit of garlic on them. Maybe not quite in that order. I was not in perfect form.

These ingredients were combined into a tasty but unimpressively-presented salad. I definitely think grilled bread belongs on more salads, though.

If I was willing to wait frustrated for a long time, I might have used my shichirin, but I am incredibly bad at getting my Japanese charcoal to burn. Sumibi-grilled bread… mmm…

Dolsot Bibimbap at Lotte World

I don't know what possessed me to go to Lotte World, the megalithic shopping center, in Jamsil, complete with indoor ice skating rink and a shooting range. But I did, and of course, I needed lunch.

While touring the food-laden Lotte department store basement section, I acquired some very nice artisanal gochujang, dwaenjang, and ssamjang, which may be responsible for my sudden urge to eat dol sot bibimbap.

But I walked over acres (hectares?) of shopping madness before deciding to do that, narrowly escaping a Disneyland-like hell of a parallel universe constructed inside the 3rd floor of one of the Lotte World buildings meant to resemble a traditional Korean village. When I saw photos outside the entrance featuring bizarre cartoon-like characters in big-headed costumes, I realized that this particular tourist trap was not for me.

And so I moved on in search of food.

As it turns out, most of the building suffers from the same chain-driven mediocrity that any other big shopping mall in the world aspires to, complete with TGI Friday's and KFC and Lotteria. But it looks like it's possible to eat a decent meal even in the cafeteria-like sections of the complex. One of said cafeterias was where I ended up.

You can walk around the cafeteria perusing short menus, then you place your order at a counter in center of things that serves as a hub. The cashier dispatches your order to the appropriate shop electronically. When your number appears on a mechanical sign, you go to the appropriate vendor and pick it up.

My dolsot bibimbap dispatched with the conventional raw egg in favor of a partially cooked one. That may be because they don't heat up the dolsot well enough to completely cook the egg as you stir it into the rice and vegetable mixture. The flavor was respectable, but I've actually had a better, spicier dolsot bibimbap in a department store basement quick-service restaurant in Japan. In a pinch, it works, but I prefer to eat this kind of thing at a small mom & pop place in a decaying old building.

 

Nasu no karashi miso ni: Eggplant with mustard miso

One of my favorite Japanese dishes, ever since I first started exploring Japanese cooking, was nasu no miso ni, a simple eggplant dish with miso. As I've mentioned before, there are probably as many variations on that dish as there are mothers in Japan.

This is one of mine. Pan-grilled deep-purple mini eggplant, cooked with a little tea seed oil, somehow became magically bright purple after a couple of minutes of heat

Normally I'd just add mirin, sugar, a bit of dashijiru and miso, but this time I also added a bit of mustard and a splash of vinegar. As the dish simmers, the sauce thickens up and some of it is absorbed by the eggplant.

I'd call this variation nasu no karashi miso ni.

I liked this style... It is a bit like serving konnyaku or tofu with sumiso (also a mustard and vinegar seasoned miso), except warm.  It's a surprisingly delightful way to bring the flavor out of the eggplant.

Like most versions of nasu no miso ni, it looks best on right after cooking, but the leftovers taste even better after they've rested for a night or so in the refrigerator.

Baby zucchini, tomatoes and oregano

Baby carrots, as we know them, are a clever innovation of industrial agriculture: Carefully milled down into unnaturally smooth specimens from big torpedo carrots, baby carrots might as well be kokeshi dolls.

So I wasn't sure what to think when I spotted some miniature zucchini at the supermarket last week.

Baby zucchini could be some sort of bizarre genetically manipulated factory agriculture monstrosity, for all I know. Since I found them at Whole Foods, though, I made the assumption that they are at least arguably natural, even if they did come in a sealed plastic bag. Every time I've seen home-gardened zucchini, though, they've been unnaturally large... I'm not sure what kinds of tricks make them stay small.

I took the zucchini home, not quite sure what I had in mind, but when I got home, I just wanted a simple side dish to accompany a couple of other things.

This dish required the least bit of attention, but it was the star of the show. It's made with some sauteed onions splashed with vermouth, and maybe a little garlic.

Sliced lengthwise, the zucchini were gently caramelized, flesh-side-down, in a little olive oil. I added the onions, fresh tomatoes, and a little additional tomato paste, the tomato paste would have been unnecessary with good tomatoes, but the fresh ones I had on hand weren't really that aromatic. A little fresh oregano wakes up the rest of the flavors.

I served this with a flavorful but very ugly savory custard. If I hadn't been eating something so rich along with it, I might have added a little shaved parmesan or some nice feta. I wanted something a bit lighter this time. Keeping things simple has its own charms...

Umeboshi cheese no kushiyaki

Crazy, I know.

But umeboshi and cheese were always meant for each other. Grilled is even better.

I promise.

Camembert is probably a more natural fit, but I had some very respectable raw milk farmhouse-style cheddar from a Washington dairy farm snagged at last weekend's cheese festival. I was eating some pieces of the cheddar when a craving for umeboshi struck, and ate at least one pitted umeboshi on top of a cube of cheese, and it occurred to me: this needs to be grilled.

Where do such crazy ideas come from? Perhaps I owe the initial thought to some "yaki ume" I tasted at the Wakayama specialty shop in to Yūrakuchō... As far as I understood it, those premium umeboshi were at some point briefly cooked over charcoal, though the taste was barely noticeable, if present at all. I settled for some nice $16 umeboshi instead of the more than twice as extravagant "grilled" ones.

How do you make them?

Start by carefully pitting the umeboshi, taking care to pierce only one side; I suppose an olive or cherry pitter might work on some types of umeboshi. Medium-firm umeboshi probably work best; mine were already incredibly soft and I ruined a few while stuffing them.

I did the pitting by hand; I could feel the sharp side of the pit through the skin of the umeboshi, and squeezed the pit out through that pointy side.

Gently insert a small cube of cheese into the umeboshi. Carefully thread the stuffed umeboshi one-by-one onto the skewer.

Ideally, you should grill them over a shichirin grill, but I cheated and used my little gas konro, which I usually use for nabe; I fitted it with a little protective grating to keep the umeboshi from falling into the flame and disintegrating.

No need to use your best umeboshi on this, but please use umeboshi with a short ingredient list: Ideally, ume, salt, shiso, maybe shochu for initial curing. Use a creamy, rather than salty cheese.

Plate, then gently brush with a little olive oil.

Like umeboshi, they're tart. Like cheese, they're creamy. Like anything salty, they would go great with a little shochu, though on this occasion, they served as a little afternoon snack and I remained a teetotaler.

They're a little tricky to pull off, but worth it.

Pistachio saffron kulfi, slightly altered for life with an ice cream maker

I can't remember exactly when I first heard of saffron kulfi, but I think it was mentioned in a Bharti Kirchner novel, or perhaps a desi short story collection. The book waxed poetic about the value of slowly simmering saffron and cardamom, which reduces the volume of the milk by about half while thoroughly infusing it with the aromas of the spices. This is a time-consuming, hour-long or more process, only possible to achieve on fairly moderate heat with plenty of patience.

It seems unlikely that you could accomplish the same level of flavor by pulling out a can of condensed milk and stirring the ingredients together, no matter how long you wait for the cold ingredients to meld together. The extra labor is totally justified by the results.

That being said, I'm fairly lazy, as obsessive cooks go... I delight in simplicity. The unusual level of labor means I haven't made this for about 5 years, when it was unceremoniously and completely devoured, along with some sort of sorbet, in less than 15 minutes at a dinner party I hosted. This time I served it to a much smaller crowd, so that I could guarantee I'd have more than a spoonful to taste for myself. I'm jealously guarding what remains.

Kulfi is not truly an ice cream, but simply a frozen dessert made in molds or even ice cube trays. It's rather unlikely to be churned, so the result will typically be quite firm and popsicle-like. However, thanks to my Cuisinart ice cream maker and a generous hand with cream, it develops a remarkably smooth, soft texture, and can fairly be called an ice cream.

Kesar Kulfi with Salted Pistachio

Ingredients

  • 8 cups milk
  • 1 cups cream
  • A generous pinch of saffron, about 8-12 strands
  • 1 tsp. ground cardamom (best if freshly ground)
  • 1 cup sugar
  • A few tablespoons shelled pistachio nuts, coarsely ground with a pinch of salt and a heavier pinch of sugar
  • Additional pistachio for garnish, if desired

Bring the milk, saffron and cardamom to a gentle simmer. Stir regularly as the milk simmers until the volume of milk is reduced by half.

Add sugar to dissolve. Add cream, and refrigerate until chilled, generally several hours or overnight.

Pour mixture into an ice cream maker with a 6 cup capacity (if your machine is smaller, the recipe can easily be halved). After 20-25 minutes, stir in most of the seasoned pistachio mixture.

I reserved some of the pistachio mixture for a nifty silicone mold I generally leave, neglected, stowed above my kitchen cupboards. I simply sprinkled the pistachios into the bottom of the mold before pouring in the ice cream mixture. Freeze the molds overnight. Unmold and serve, perhaps with some additional broken pistachios.

If you don't have such a mold, sprinkle the pistachio over scoops of ice cream after it's hardened in the freezer overnight.

In place of pistachios, almonds work quite well.

This kind of kulfi is ordinarily poured straight into a mold and frozen, rather than using the intermediary step of an ice cream maker, but the ice cream maker results in a smoother, softer texture. The extra cream, generally not used in Indian recipes, makes the ice cream extraordinarily rich and indulgent.

Although it's also not typical in Indian recipes for kulfi, the small hint of salt in the pistachio helps bring out all the other flavors in the ice cream. Like the great salted peanut butter ice cream at Seattle's Veil, one of the most remarkable items I've sampled there, it may evoke some strong reactions: At Veil, people either love it or hate it. I don't use as much salt as Veil does in my pistachio blend, so nobody who has tried my version was terribly shocked, but getting the balance might be tricky. Start with just a little pinch.

Okonomiyaki

In spite of occasional binges cooking okonomiyaki, I don’t think I’ve ever bothered to photograph the results.

I have two or three variations of vegetarian okonomiyaki that I cycle through… Later this fall, I’ll probably start making some with kabocha, and I sometimes like to make it with kimchi and cheese. I probably should have done something with corn this summer, but I only started to think of making okonomiyaki when I saw a great deal on nagaimo recently… it was $3/lb, instead of the usual $6–9.

In this case, I’ve made a mochi cheese okonomiyaki, with a healthy dose of grated nagaimo, kizami shouga, and tenkasu. The mochi I purchased frozen, so they aren’t quite as dry as the kirimochi that are sold vacuum-sealed; they required no special consideration except for a few minutes of thawing before being cut into small pieces.

Tenkasu are small fried balls of tempura batter, which were originally merely side effects of deep-frying foods but now are produced as a carefully manufactured, predictable product. They add a little crunch to okonomiyaki, but the texture disappears quickly since okonomiyaki takes about 10–15 minutes to cook and steam will often soften much of the tenkasu.

In the last minute or so of cooking, I add Japanese-style mayonnaise, okonomi sauce, and some aonori (unseasoned gren nori flakes).

I did do some actual work today and met with a whole bunch of people, most of which were productive, though nothing I can quite reveal yet. I was running around but not really overwhelmed.

Over the last 5 months or so, I've been stepping up my exercise routine. The last couple of years working in software during the day have been particularly bad for my waistline, and a broken foot last year kept me away from the gym for several months. My newer office is inches from dozens of cheap, massive-portion quick-service lunch joints, and for most of my return to software I've just not been exercising as much as I used to. It's a dangerous combination.

A long time ago, I had an ugly knee injury from running, and I never quite got back to normal. Every time I tried running more than about 3 miles, the pain would come back.

While Hiromi was staying with me in Seattle, both of my knees started acting up, inflamed by little more than walking. My usual standby of walking long distances, either out and about or on the treadmill, just became too painful to handle.

In November I realized that my avoidance of exercise was unsustainable, and I started hunting around the gym for something that wouldn't be murder on my knees. I found most of the cycling machines boring, and elliptical striding machines were more stressful on my knees than running, so things seemed hopeless. Then I stumbled on the Concept2 rowing machine, and everything started to click.

For the last few weeks, I've been focusing on strength training, but I'm really glad to have found a cardiovascular exercise that doesn't punish my knees.

My routine since November has kept me in the gym 4 or 5 nights a week, and I get home pretty late on weeknights. I usually manage to eat a reasonable dinner, though I'm not usually finished cooking until around 9:30 pm.

Weekends are more complicated. Somehow I often end up eating irregularly, and my appetite strikes at the most inconvenient moments.

Last Sunday, I got an after-dinner craving, so I went straight for my go-to snack: popcorn. Often I toss a little truffle salt and melted butter on it, but I have another favorite: nori-shio popcorn.

I stole the idea from a microwave popcorn product that comes from Hawaii, and the nori-shio potato chips popular in Japan. That brand of microwave popcorn is crazy expensive in Seattle, so I started making it on my own.

It's easy enough to make popcorn on the stovetop with a heavy-bottomed 2-quart saucepan; I just heat a little oil on medium heat, add a few tablespoons of popcorn to the bottom, and shake occasionally as the kernels heat up. When popping starts to slow down, I turn off the heat and wait for the last few popping sounds.

Most of the time, I use a mortar and pestle to grind up prepared nori furikake, which I buy at Uwajimaya in Seattle. If I don't have that, I sometimes mix up aonori, sesame seeds, salt, and a bit of sugar, and work that into a fine powder with the mortar and pestle or a spice grinder.

I toss the cooked popcorn and the nori blend in a big bowl. Sometimes, there's not quite enough oil to get the furikake mix to stick to the popcorn, so I might spray or drizzle a little more oil onto the popcorn, which usually helps a bit.

Nori, sesame and salt get along with popcorn swimmingly, so this is one of my favorite snacks.

Snow peas and aburaage itame ni

Although sautéed and stir-fried dishes do not figure prominently in Japanese cuisine, simple dishes in that category will appear on the tables of most Japanese homes.

The scale, however, is much more diminutive than most Chinese, and certainly most Americans, would expect.

Historically, oil was fairly expensive in Japan, and a typical farming family might have gotten away with a single modestly-sized bottle of vegetable oil over the course of an entire year, even in the era of cast-iron pots. A tiny bottle of toasted sesame oil, mostly used a few drops at a time, might provide a flavor boost to otherwise simple dishes.

Itamemono, or pan-sautéed dishes, generally have a fairly subtle flavor. Even soy sauce is used with a very light hand. Dishes do not acquire the "red" color of Chinese-style stir-fried dishes.

This type of dish is best with a short list of ingredients, prepared in small batches; I don't think I made this with much more than 1 to 1 1/2 cups of raw ingredients, and it was enough for two or three Japanese servings along with other dishes. My tiniest omelet pan did the trick. For a group of four or five people, you could get away with making a larger quantity in a 10" skillet.

I used some snow peas (sayaendō), carrots prepared with a simple rolling cut, and onions. I dunked some abura-age (tofu puffs, perhaps) in very hot water and squeezed the water out to prepare it for the pan. This helps the aburaage more readily absorb salt and seasonings, and coincidentally slightly reduces the oil content.

This kind of sauté is done with very little oil at a fairly high temperature. I add a small pinch of salt every time I put a new ingredient in the pan, then finish with some soy sauce, sake, and mirin.

Japan doesn't have the French convention of caramelizing onions, but if you bring the onions just past translucent they'll add a great aroma and natural complexity to the flavor of the dish. Add the carrots, cook for a minute or two longer, then add the snow peas and aburaage. Once these are a bit shiny, add a small splash of soy sauce, a good tablespoon of sake, and maybe even a little dashijiru, then perhaps one or two drops sesame oil. In some cases you may want to add a touch of sugar or mirin, but I think the onions and carrots are naturally sweet enough that additional sugar is usually unnecessary to achieve an ama-karai (sweet-salty) taste.

Simmer briefly, taste, adjust seasonings if needed, and serve in small bowls.
