Tricolor roasted peppers and Beecher's cheese curds 

Although bell peppers are available year-round, they're really a summertime thing. But bell peppers have been a bit cheaper than typical for this time of year, and I've noticed a few good deals. So I threw seasonality to the wind and brought a few home.

When I have bell peppers around, the first thing that occurs to me is to roast them, which brings out an incomparable sweetness. I can eat them with nothing more than a sprinkle of salt, and I can make them disappear like candy.

With just one or two peppers, I typically roast them on my little tabletop gas konro which I bought to enable nabe-making, but starting at about 3 bell peppers, it's far more efficient to stick them under the broiler in the oven. The only problem is that, when the skin finally blackens under my broiler, the peppers are more than fully cooked, and they become mushy and undesirable by the time I get to eat them.

As a result, when using the oven, I now halve the peppers, and I only roast them until about 1/3 of the skin has turned black. Then I place them in an airtight storage container for 15 or 20 minutes to let the skins loosen up and the flesh cool down enough to handle.

With this method, the peppers get just enough caramelization to have all the desirable flavor, without turning into a near-puree. The downside is that the skin is a bit harder to peel than when the skin is fully blackened.

This time, I picked up one yellow, one orange and one red pepper, so I thought I'd turn them into a simple and colorful salad.

After I finished roasting and peeling the peppers, I sprinkled a little salt and olive oil on them, and mixed in some broken cheese curds I had picked up the same day at Beecher's. Because the roasted peppers are so flavorful, no special seasoning is needed, but some fresh basil or shiso might be a nice addition.

A simplification of a dish I sometimes make with mushrooms, this dum ki khom-inspired cauliflower dish features a cashew-based sauce with a hint of clove and cardamom. Seasoned with a fair amount of freshly grated ginger and a little garlic, It's dressed with a lot of cilantro, which provides a nice cooling effect. I added a tiny bit of palm sugar for this just to enrich the sauce. Instead of yogurt, I used a splash of coconut milk. Tomato paste helps provide color to the cashew sauce as well as a nice acidic counterbalance.

The dum ki khom dish comes from a Japanese-language cookbook by Renu Arora, whose instructions involve preparing the sauce separately from the mushrooms. However, cauliflower takes long enough to cook that I prepared the sauce right in the pan after briefly sauteeing the gobi in ghee, seasoned with garam masala, cumin, and a bit of turmeric.

I wanted to use up some asparagus and take advantage of some cheap bell peppers, so I made a sauteed dish with a mustard seed-heavy sauce. To enrich the food with a bit of protein and to make the sauce a bit thicker, I ground some white urad daal up in a spice grinder and cooked it into a sauce with a bit more tomato paste. I used some whole mustard seeds, garlic, and onions as the dominant notes, and I think I used a bit of fenugreek and cumin as well.

This week I was a little heavy-handed with tomato puree, but both of these dishes like their tomatoes.

Matcha-Kinako waffles, soba waffles, soba okonomiyaki

I was too much a slacker to photograph either endeavor, but yesterday morning I made some buckwheat waffles, and at night I realized that I still had a bit of batter left. I thinned the batter a bit and added some chopped pickled takana and leeks, a tiny bit more salt, and produced something along the lines of pajeon or okonomiyaki, dressable with Japanese mayonnaise and okonomiyaki sauce. The buckwheat or soba flour added a nice nuttiness.

This morning, however, I was resourceful enough to get my camera ready. I made a matcha-kinako waffle batter (powdered green tea and toasted soybean powder waffle batter) dressed up with a little bit of matcha whipped cream and kuromitsu (black sugar honey syrup). I’m a little bit low on kuromitsu, so I substituted a bit of buckwheat honey when I ran out of kuromitsu, but the effect was similar.

The green tea of course is more visible in the cross section. By the time I got this far, I was too hungry to photograph it.

Matcha-Kinako Waffles

1 tsp. Matcha for Cooking
1 tbsp. Sugar
2 tbsp. (20g) kinako (toasted soybean flour)
1/2 cup flour
1 level tsp. baking powder
1 tbsp. butter, melted
1 egg
1/2 cup + 2 tbsp. milk

Sift dry ingredients into bowl, whisk egg, melted butter, and milk in separate bowl. Mix wet and dry ingredients briefly with a fork until mostly consistent. Bake in a waffle iron according to manufacturer’s instructions. In my small waffle iron, this makes a bit more than 2-7” diameter thin waffles. The recipe can readily be doubled or otherwise multipled..

You can substitute about 4 teaspoons “Matcha latte mix” for the sugar and matcha. I used about 1 teaspoon matcha latte mix for 3 tbsp. of cream to make the whipped cream topping. Dust with powdered sugar and straight matcha.

Souzai and kurogoma-doufu

We had a leisurely morning one day and decided to stay home for lunch. We took advantage of some food Hiromi's parents had sent us away with, all acquired at a supermarket.

The souzai (side dish) set, ready to eat, included several small portions of simple dishes that are easily prepared in bulk, but rather time consuming to do in small quantities. At home I've made some variation of almost all of these dishes, but rarely all for the same meal.

I don't usually buy a lot of convenience foods in the U.S.

Some sweet-savory beans, tamagoyaki, kabocha no nimono (simmered squash), one aemono, a little hijiki with moyashi, and two other simple nimono. One contained gobo (burdock root), daikon, carrot and ganmodoki. The other is a mildly seasoned satoimo (small taro potato) dish with scallions and a little bit of yuzu peel.

We also had some black sesame, starch-thickened, gomadoufu, which came with a little sauce packet. 

We only needed to prepare a little rice to accompany this to have a fairly decent everyday meal.

Cold weather food: Kimchi dubu jjigae

I made a variation of kimchi dubu jjigae today, as the weather has been turning a bit cooler.

I usually get the kimchi from a north Seattle Korean market or, when I lived on the Eastside, from a little one in Factoria. This time I just got it at the Central Market location in Shoreline, where I was doing a demo.

This one has some maitake mushrooms, yu choi (like natane), soft tofu, scallions, simmered daikon, and bean sprouts in addition to the kimchi, and I later added some eggs to poach in the soup.

There were, of course, some leftovers.

Although I have a weakness for ravioli, tortellini, and other stuffed pastas, the prototype of stuffed pasta, gnocchi, is really the stuff of my dreams.

It's alluring because, without any special equipment, one can quickly pull together a decent result, even on a weeknight, so long as only one or two people are eating. But the perfect gnocchi is often elusive: nearly melt in your mouth, proper gnocchi must still have enough texture to hold together, and should not be dense, uneven, or hard in the center. But circumstances sometimes conspire against us.

While I'm inclined to reserve the most attention for clever variations such as kabocha gnocchi, the simplest and most basic version, built on little more than hot, riced potatoes, an egg yolk or two, and flour, is everything I really could ask for. Sometimes I add a bit of salt to the dough, and sometimes I salt only the water for boiling.

This time, the gnocchi alchemy worked out in my favor, and I got almost exactly the texture I wanted.

In spite of the unavailability of decent tomatoes this time of year, I had an uncontrollable craving for some form of tomato sauce. A decent variety of canned tomatoes came to the rescue. I made a thyme-heavy sauce with onions and garlic. I wanted something a little more substantial, though, so I worked in some nice black kale and ordinary crimini mushrooms.

I made enough to have leftovers for lunch at work the next day, and my lunchbox version also featured the addition of small balls of mozzarella, which I actually meant to be part of this dinner, too, but, you know, I'm occasionally a little forgetful.

Side trips to Doe Bay, Baker hot springs, and last Sunday's dinner

Hiromi and I made a rather sluggishly paced trip out of town Monday morning, owing to some morning errands. We had vaguely planned to head toward the Olympics, but a last minute decision sent us toward Orcas Island instead, which we reached rather late due to a full afternoon ferry.

We ended up in rustic accommodations at Doe Bay Resort, which has a couple of heavily chlorinated tubs filled with water from a hot spring, facing a nice bay view. Originally we thought this would be a short stopover on the way to some forest spring, but I had forgotten about the pace of island life… it’s defined by long, occasionally severely delayed ferry commutes, and particularly in the San Juans, long stretches of windy road. The weather improved as we approached Shaw Island, but the day started out rather gloomy. Once we arrived, we made our way to the resort, took a quick dip in the hot spring tubs, and then set out in search of a late dinner, even after a day full of small snacks…

We ended up at a forgettable but serviceable Caribbean-themed restaurant full of locals, which apparently switches to a no-service fast-food-style order at the counter and pray they find you when your order is ready model after peak dinner hours. The host looked at us smugly and said there was no waiting list or probability of indoor seating but we were welcome to order and pre-pay. We had some overly browned but still edible corn fritters and some pasta, and a curried avocado dish. It was kind of hippie food with Seattle mid-range restaurant prices. The drink, whatever it was, helped.

We managed to get a healthy amount of sleep, and made another trip to the hot springs and took a nice little walk before checking out. We had a very nice, simple brunch with baked eggs and baguette, a provolone sandwich, and some very nice apricot pie at Rose’s Bakery.

Once off the island, we made our way toward Mount Baker, by way of Concrete. The Baker Lake area has an easily hikeable sulfurous hot spring, which is actually fairly lukewarm. The main challenge was passing through a heavily rutted logging road. The volcanic ash in the spring seems easily disturbed, so you can end up with a small accumulation of coarse ash particles when getting out, but it didn’t bother us.

On our way out, we noticed these nifty not-quite-ripe salmonberries, which I haven’t seen much of since I was younger. Blackberries were everywhere, though nowhere near ready. We also passed a few wild blueberry plants and Northwest red huckleberries, already growing berries, but not yet at the peak of ripeness.

I think I was too sleepy to post dinner from the day before we departed, but Hiromi and I cooperated on dinner. I usually do most of the cooking, but she did the majority of the work today. She prepared the avocado and shiitake gratin, an eggplant raita (which is noticeably lacking in fresh cilantro on these photos… we were distracted). I made a mushroom and cashew curry, and after dinner, a matcha martini.

A somewhat dry-fleshed, thick-skinned orange, possibly from Ehime prefecture, popular for its sappari or refreshing taste. It’s a bit bitter and perhaps a bit similar to a Seville orange.

Zundamochi are daifuku made with edamame paste. They’d probably be more impressive in cross-section, but we were hungry already. We found them at Mura-kara-machi-kara-kan.

A few years ago a chain of okayu restaurants sprouted up around Tokyo, even offering brown rice and multigrain versions. With modest 200–300 calorie portions and optional add-ins, the restaurants are popular with women in their 20s and 30s. There are no unaccompanied men in most of these, and I was one of perhaps two in the restaurant. Hiromi had the yuba and greens okayu in the foreground, which had 5 grains; mine was a brown rice okayu with fried onions and greens, with an add-on onsen tamago (soft-boiled egg).

I’ve forgotten what they called it, but this is essentially a steamed cake with chunks of kabocha, and ever so slightly sweet. It’s actually in the “yum-cha” or dim-sum part of the okayu shop’s menu, rather than their dessert section.

Cherry-blossom ice cream, from an old-school kissaten near Meguro-station that serves average quality vacuum-pot coffee and various sandwich-like nibbles. The ice cream appears to be a lightly-flavored cherry ice cream served on a cherry leaf and topped with shiozuke, or salt-pickled cherry blossom. This one wasn’t terribly salty, so they may have rinsed it first.

I went to deliver something to one of my customers, Fresh Flours, which is just awaiting final inspections before they open. They were having some computer trouble, and remembered that I used to work for Microsoft, so I was recruited to investigate the problem. Somehow I managed to solve it… it was deceptively simple. Anyway, I was given a preview of coming things to take home… some black sesame cookies and some chocolate cookies with nutty slivers (maybe almond).

They are quite nice… only mildly sweet, full of nutty flavor, and with a nice sugar crunch on the outside…

I also made a brief stop at Les Cadeaux Gourmets, originally just to look for something yummy to substitute for my standard Dragon Beard Candy gift for folks who have had enough already. Anyway, I got to talking with the owners, and suddenly found myself with a new customer… I’ll reveal more later…

Thanksgiving and new geek toys

I had some dinner guests yesterday, not quite something I had planned. I was planning on making squash gnocchi for myself anyway so I added a few other dishes and had a little party... a little salad with pomegranate seeds, a frittata, a little mushroom dish with some garlic and rosemary, and of course the squash gnocchi, made using potatoes, kabocha, and flour, roughly estimated. I then served some sweet potato ice cream and pear sorbet. The pear sorbet turned out really nicely... nothing more than pureed, slightly cooked fragrant pears, sugar, and lemon juice.

Today I woke up after sleeping a rough 5 hours, and then I was up for a couple of hours before I crashed again. It was a little late to properly prepare my planned contribution to a Jennifer-hosted Thanksgiving. I made a hurried bread dough and then I prepared a butternut squash gratin, which was a good way of using up the extra pureed kabocha and heavy cream from yesterday. Today's stuff was a little rushed, so it didn't turn out as well as yesterday's food.

I got a replacement for my damaged Sony Ericsson T616 cell phone. I settled on a Motorola Mpx220, which I hunted down at a Best Buy location after abortive attempts to order it online. It seems like a decent choice so far, though I'm having some little frustrations with it.

The voice recognition works better than my last phone's "voice tag" system, though it doesn't seem to work in handsfree mode. The camera was behaving erratically yesterday but seems not so completely insane today. I had some issues setting up features like email and so on because the menu system was not initially very intuitive for setting up new accounts.

Voice quality is decent, and I can hear better than I did with my T616. The internet features are substantially better, and syncronizing my address book with Outlook is absolutely painless; it was something I dreaded when I was trying to do that with my Sony phone, because I was always wondering which contacts would suddenly be duplicated and also whether the phone would even be detected by the Sony-bundled package. ActiveSync is actually a pleasant experience, which is surprising to me, considering all the horrible things that people said about ActiveSync a few years ago.

The next few days I'll be doing in-store demos for my candy at the Uwajimaya stores, and then I have to furiously get my publicity stuff together.
