Wow, that looks like a spectacular meal. I am trying to imagine cheese and anchovies with the mild flavors of ochazuke and I can't do it. I have to try it for myself. The photos are beautiful.

It was a very nice dinner.

Ochazuke isn't always mild... and there are dashi-ochazuke instead of ocha based ones that might have a stronger base note. Sometimes the furikake that might be put on top of ochazuke have other kinds of dried fish in them (tangle, katsuo, dried sardines, etc), so those ones would be stronger-tasting as well.

Of course, for me, it was reasonably mild except for the wasabi, since I skipped the anchovies in favor of the basil and parmesan.
