lovely! my favorite way to prepare beets came to me by way of chef John Ash. Bake them whole. It is so easy, you trim them of tops and ends, coat them with ample olive oil and then bake in a covered dish at 375 for about 45 minutes. Alow for them to cool and the skin slips right off and they retain more of their sugar than if you boil them and they don't get mushy.
