The book waxed poetic about the value of slowly simmering saffron and cardamom, which reduces

re: Pistachio saffron kulfi, slightly altered for life with an ice cream maker

scrumptious. jason, do you have an indian grocer nearby? he/she will stock alphonso mango pulp in a can. try kulfi with that next time, with the saffron and pistachios.

I've never made mango kulfi because it's so much easier to find in Indian restaurants here than other varieties, though I'm rarely in the mood to order dessert after a heavy meal. However, it's certainly on my list of things to do.

I've occasionally made a simple mango ice cream with fresh mangoes and a little lemon or lime juice, but that's been a few years, too. Since most mangoes in the US are rather stringy, that takes some battling: the pulp needs to be strained. But in late July sometimes the mangoes are just good enough.

I should play with the canned alphonso mango pulp, as I know it's much smoother in texture... it would surely simplify mango desserts.
